I’ve been a busy little bandit lately. Between my production gig at Minnesota Public Radio, copywriting for d.trio, guest-posts over at Yes & Yes and CRAVE and the launch of my Spruce Up Yo’ Resume Scholarship Contest, I haven’t had much time for luxurious morning workouts, afternoon catnaps or languorous evenings of IKEA caviar and melba toast. For shame!

Unicorns for Socialism has felt like a workaholic portal lately — so let’s break it up with a frivolous post about FOOD. Food, glorious food. Food that I covet. Food that makes me swoon. Food that soon — quite soon! — I will actually have time to prepare & consume. I am, after all, a 21st century dandy. I have certain lifestyle to uphold.

{ Red Velvet Pancakes }

What, you ask, could possibly be better than red velvet cake? Red velvet pancakes. The Breakfast Cook has outdone himself this time ’round. I don’t really need to elaborate further — the photo speaks for itself.

{ Ginger Jeweled Salad }

I like ginger. I like jewels. I like salad. I want this. And I want the nice lady from 101 Cookbooks to toss it for me.

{ Savory Greens, Tomatoes & Goat Cheese Tarts }

I know that chevre isn’t for everyone, but it is definitely for me! Don’t these Tartlette creations look scrumptious? Yeah, I said it. And I’ll say it again: scrumptious.

{ Roasted Brussel Sprouts with Cranberry-Pistachio Pesto }

I can almost taste the bitter, caramelized brussel sprouts swimming in the tart, buttery cranberry-pistachio sauce. My. Gullet. Now. Please. The Steamy Kitchen is my new culinary hero.

{ Pomegranate Cupcakes with Vanilla-Pom Buttercream Frosting }

It wouldn’t be a proper “food porn” post without at least one cupcake contender, now would it? This recipe comes from Pandas & Cupcakes, which is almost certainly the bestest / cutest blog title I’ve ever encountered. And don’t pomegranate cupcakes just scream “springtime?” I bet they scream adorably. Like baby pandas in minor pain. Aw.

So, hungry hungry hippos … what’s on your “must-eat” list at the mo’?
